In 1995, a young chef in Naples made a decision that would shape the next three decades of his life: never put anything on a plate he wouldn't be proud to serve his own family. That decision is still the foundation of everything Rotonda does today — every dough ball shaped, every San Marzano tomato crushed, every event we show up to.
Rotonda's Master Chef began his culinary journey in 1995 — not in a culinary school, but in the kind of kitchen where the dough is weighed by feel, the oven temperature is measured by hand, and the head chef's approval means everything. The kind of kitchen where shortcuts simply do not exist.
After three decades of refining his craft across Italy, he brought that relentless standard to Sydney — and to Meadowbank, NSW, where Rotonda was born. What started as a personal mission to share authentic Neapolitan pizza with Australia has grown into Sydney's premier mobile wood-fired pizza catering service, trusted by wedding couples, corporate event managers, and private hosts who refuse to compromise on the quality of what their guests eat.
Today, Rotonda operates across Greater Sydney — from Castle Hill to Western Sydney, from Drummoyne to the Northern Beaches and beyond. The oven travels. The standard doesn't move an inch.
These aren't values we put on a website. They are the decisions we make every single day — in our ingredient sourcing, our technique, our supplier relationships, and in how we show up to your event. If something doesn't honour these three pillars, we don't do it. Simple as that.
Authentic Neapolitan pizza is not a style — it is a heritage. Our dough ferments for a minimum of 48 hours, using methods unchanged since our Master Chef first learned his craft in 1995. Our San Marzano tomatoes are grown in the volcanic soil of Campania, where the mineral richness of Vesuvius's ash produces a flavour that no substitute can replicate. Our fior di latte is sourced from producers who share our refusal to cut corners.
We do not serve Hawaiian pizza. We do not use flavour shortcuts. We do not chase trends at the expense of truth. If a technique is not authentic, it does not belong in our kitchen — or at your event.
Our 48-hour fermentation process isn't just about flavour — it is about digestibility. Long-fermented dough breaks down the gluten structure gradually, producing a crust that is lighter, more nutritious, and significantly easier to digest than standard pizza dough. Many guests who normally avoid pizza find they can eat ours without issue.
Dietary inclusivity is built into our menu from the beginning — not added as an afterthought. Vegan, vegetarian, gluten-free, low-allergen options are part of our standard offering, prepared with the same care and presented with the same pride. Every guest at your event deserves to eat well. Not just the ones without restrictions.
We choose our suppliers the same way we choose our ingredients: carefully, and without compromise. Sustainable sourcing is not a marketing claim for Rotonda — it is a purchasing decision that happens every time we order ingredients, choose a supplier, or evaluate a new product.
We believe that how food is produced is as important as how it tastes. That means supporting producers who treat their land, their animals, and their workers with the same respect we bring to our craft. Our mobile wood-fired oven has fired at events in backyards, rooftop terraces, corporate venues, winery pavilions, and beach-side parks across Greater Sydney and regional NSW. Wherever your event is, we bring the same standard.
We regularly cater events in the Hunter Valley and Blue Mountains, and can discuss logistics for more remote locations on request. If there's a story to be told, we'll find a way to be there.
